Oyster populations are falling off across the United States, and in Florida, until recent years, 90% of the state’s oyster harvest came from Apalachicola Bay.
Pensacola Bay is feeling the effect of the oyster shortage, too. Since 2001 when the harvest peaked at 60,000 pounds, most coming from waters in Santa Rosa County, the decline has been significant.
