Denene Wallace of Navarre Beach began cooking gluten and sugar-free food for her own health benefits, but now her delicious recipes have reached a national audience with the publishing of her first cook book, “The Joy of Gluten-Free and Sugar-Free Baking.”
In 2005, Wallace was diagnosed with type 2 diabetes. The diagnosis came as a shock because it didn’t run in her family and she was an otherwise healthy woman. Her doctor told her she would have to take five shots of insulin a day for the rest of her life.
